Yes, our honey is made in our hives and comes from a number of pristine locations spanning the breadth of New South Wales from the South Coast to Central West, to the Snowy Mountains and Northern Victoria. We harvest the honey and bottle it – so it’s our product and process from hive to jar.

Our Organic honey, is produced 100% organically from native Australian floral sources and is USDA Certified Organic/NOP.

In order for our honey to be certified as organic, our beehives are placed more than 3 miles from any cultivated area, which is the maximum area that bees will roam to gather nectar.
This is to keep them in completely untouched environments as they pollinate the flora and produce honey in the hive. These hives are placed in vast tracts of uncultivated bushland or in one of the many locations we have permission to place hives in NSW National Parks and native forests. Our organic honey is from 100% native Australian flora such as Ironbark, Blue Gum, Spotted Gum and Peppermint – just to name a few!
Apart from our specific seasonal varietals, our non-organic honey often comes from similar areas such as Red/River Gum on the banks of the Murrumbidgee River but if the hives are less than 3 miles from cultivated land, the honey cannot be certified as organic.

At Wild Nectar, all our honey is 100% raw and cold extracted. This means we don’t heat the honey to pasteurise it during the extraction process, as this alters and diminishes the delicate sugar structures, pollens, and enzymes within it, which significantly impairs the quality and taste.
Pasteurising it does make it last longer before crystallising, but it darkens in colour and caramelises over time. Raw honey on the other hand crystallises much faster, but this can also be down to the floral variety. For viscosity when straining (to remove any hive debris etc.) and bottling we do gently warm the honey so it flows better, but not above the temperature of a hive on a hot day.

Crystallisation of honey that has been sitting in your pantry for a while isn’t a sign of poor quality honey. In fact, it’s an indicator that our 100% cold extracted honey is not highly processed. It is a natural change that happens over time and especially if the honey is stored in a cool place, and can be reversed by gently warming the jar or bottle in a tub of warm water. Otherwise it’s perfectly good for baking, in tea or will melt onto a hot piece of toast!

We are based in Temora, NSW and we also have a base in Nowra, NSW for more efficiently extracting our honey from the various state-wide hive sites with less transport miles. There are absolutely no additives or preservatives in our honey. Our honey retains its natural properties and flavour exactly as the bees created it, straight from bush to bottle.
